1/3 Cup Pure Pumpkin
1 Bag Mini Chocolate Chips, for decorating
1/2 Tsp. Cinnamon
2 Tbsp. Granulated Sugar
1 Tbsp. Powdered Sugar
1/2 Tsp. Pumpkin Pie Spice
4 oz. White Chocolate
1-1/2 Cups Graham Cracker, crumbs
Directions
- Melt the white chocolate in your microwave. Set aside for 5-10 minutes until it cools.
- In a large bowl, mix together the pure pumpkin, powdered sugar, and pumpkin pie spice to combine.
- Add the melted chocolate and stir to combine.
- Fold in the graham cracker crumbs until you have a thick, soft dough.
- Cover the bowl with plastic wrap and chill the truffle dough for 1-2 hours or until firm enough to scoop and roll.
- In a separate, shallow bowl, mix together granulated sugar and cinnamon to combine.
- Once the dough is chilled, scoop 1 tablespoon sized truffles and roll between your hands to create a smooth ball.
- Drop the truffles into the bowl of cinnamon sugar and roll around to coat.
- To decorate your truffles like little pumpkins, use a toothpick to press indents into the sides of the truffle to look like the ridges you find on pumpkins. Press a mini chocolate chip into the top of your truffle for the stem.
- Keep them in the fridge until you serve or Enjoy!
